Artichoke Dip

Ingredients:
1 can (19 oz/398 ml.) artichoke hearts, drained
¼ cup fat-free ricotta cheese
¼ cup fat-free sour cream
¼ cup chopped fresh parsley
¼ cup chopped scallions about 1 bunch
3 tbsp fat-free mayonnaise
3 tbsp grated parmesan cheese
1 tsp minced garlic
Instructions:
Place drained artichoke heats, sour cream, ricotta, scallions, parsley, parmesan, garlic and mayonnaise in food processor; process until slightly chunky. Make sure to avoid over-processing as you don’t want it pureed. You may serve immediately at room temperature or chilled.
Serve with fat-free tortilla chips or vegetables.
