Pasta with Garlic Shrimp and Olives

Ingredients:
6 oz fresh shrimp, peeled and deveined
3 oz dry pasta such as angel hair or fusilli
ΒΌ cup pimento, diced (one 2 oz jar)
5 each black ripe California olives
2 tbsp cooking sherry
1 tbsp orange juice
1 tbsp fresh chopped parsley
2 each garlic cloves, minced
1 tsp capers, drained
1 tsp tomato paste
salt and pepper
Instructions:
- Cook pasta according to package directions, drain and keep warm.
- In medium skillet combine sherry, orange juice, pimento, olives, parsley,
garlic, capers, tomato paste, salt and pepper. Bring to boil. - Add shrimp and cook 2-4 minutes or until shrimp turn pink. Remove from
heat. - Add pasta to skillet and toss blending all ingredients.
Serve immediately.
