Melanie's Seasoned Roasted Vegetables

Ingredients:
Nonstick cooking spray
1 medium eggplant, sliced
2 medium zucchini (or 1 zucchini and 1 yellow squash), sliced
1 red bell pepper, sliced
1 green bell pepper, sliced
1 sweet onion (such as Vidalia), sliced
4 carrots, sliced
1 tomato, cut into wedges
1 cup sliced mushrooms
3 garlic cloves, minced
2 tablespoons fresh chopped basil
2 tablespoons fresh chopped cilantro
2 tablespoons fresh chopped parsley
¼ cup 2% shredded mozzarella cheese
¼ cup shredded Parmesan cheese
Instructions:
- Preheat broiler.
- Line a baking sheet with aluminum foil and spray foil
with nonstick cooking spray. - Arrange vegetables on prepared baking
sheet. Lightly spray vegetables with nonstick cooking spray. - Sprinkle
garlic, basil, cilantro, and parsley over vegetables. - Broil for 10
minutes. Remove pan from oven, turn vegetables over, and sprinkle with
cheeses. Broil for an additional 10 minutes or until cheeses melt.
Serve warm.
